Melco Resorts’ soon to open Cyprus integrated resort, City of Dreams Mediterranean, has announced the appointment of culinary veteran Olivier Belliard as the property’s Executive Chef.
Belliard, who has worked under several Michelin-rated chefs during his 25-year career, will lead a team of 200 at City of Dreams Mediterranean with the task of delivering the company’s F&B vision and matching its international standards, Melco said.
“My goal is to establish City of Dreams Mediterranean as the ultimate gastronomic destination on the island,” Belliard said.
“With my talented team, we share the same passion and we aim to take our guests on an extraordinary culinary journey. Coming from a long tradition of Michelin star restaurants and award-winning resorts, perfection for me is the key.”
Belliard is currently Executive Chef at JA Resorts & Hotels in Dubai and has previously worked at Le Bristol in Paris, multiple restaurants in Mauritius and St Regis in San Francisco.
